Building Description

The Meat Lab is located on the west end of the Animal Science Complex. The lab allows students to create their own meat products and conduct research. Products are for sale at the lab's retail space.

The Meat Lab processes and merchandises meat from its teaching, Extension and research missions. Meat is NOT sold from research projects that may compromise food safety. The Meat Lab is a fully inspected facility and all animals and meat products must pass government inspection before being sold. All beef is aged to maximize tenderness and flavor. Most products are sold frozen to ensure high quality and longer shelf life. The Meat Lab employs several undergraduate students, who are given the opportunity to learn about all aspects of harvest, fabrication, processing and sales.

Meat Orders: Monday-Friday, 8 a.m.-5 p.m.

Sales Hours: Thursday and Friday, 1-5 p.m. (no cutting after 4:30 p.m.)

Contact Number: 605-688-5925 (Meat Lab Manager - Adam Rhody)
